Does tree sap ruin a ceramic coating?

Sap that sits long enough can bond to any surface, coated or not — the difference is what happens next. On coated paint it releases with proper removal and the finish underneath is untouched; on bare clear coat the same spot usually needs polishing. Rinse sap promptly either way.

Is pollen season a bad time to get coated?

It's the best time to already be coated and a fine time to book. The install itself happens in your garage or shade, and once cured the coating is exactly what makes pollen season survivable — film rinses off instead of being wiped into the paint.
